SOPA TOM KHA

INGREDIENTES:

1 large broccoli
1 l Yosoy Rice & Coconut
200 g firm tofu
3-5 mushrooms, chopped
1 tomato, diced
1 small onion, julienned
1 lime, grated
1 piece lemongrass
2 cm piece of ginger, sliced

To serve (per large bowl)

1 tbsp. Tamari sauce
1 tsp Miso
1/2 tsp Chilli (optional)
A stem of coriander
Lime juice

PREPARATION (STEP BY STEP)

1. Put the Yosoy drink in a saucepan and bring it to the boil

2. Add the ginger, lemongrass and lime zest and boil for 3 minutes

3. Add the tofu and boil for another 3 minutes

4. Add the onion, tomato and mushrooms and boil for another 5 minutes

5. Serve in the bowl with 1 tbsp. of tamari sauce, 1 tsp. miso and chilli if you wish

6. Add the lime juice and the coriander
