CHOCOLATE AND COFFEE MUFFINS WITH YOSOY OAT 0% SUGAR
INGREDIENTS (FOR 4 OR 5 MUFFINS):
250 ml of YOSOY Oats 0% Sugar
Juice of ½ lemon
4 tbsp. of extra virgin olive oil
4 tbsp. of freshly brewed coffee
200 g whole meal spelt flour
40 g of pure cocoa powder
6 tbsp. of date paste/erythritol/another sweetener (optional)
1 tbsp. baking powder (10g)
100 g dark chocolate drops
*You can use chopped chocolate
PREPARATION (STEP BY STEP)
*Preheat the oven or the air fryer to 180°C.
1. In a bowl or jug, whisk together the Yosoy Oat 0% Sugar, lemon juice, coffee, and oil.
2. In another bowl mix the dry ingredients: flour, cocoa, erythritol and baking powder.
3. Add the mixed liquids little by little so that no lumps form, you can use the mixer.
4. Add the chocolate drops and set aside a handful for decoration.
5. Fill the muffin or cupcake moulds almost to the top. Put some chocolate drops on top and bake the mixture in the oven or air fryer at 180°C for about 15 minutes. You can also microwave them for 3-4 minutes at medium power, the result depends a lot on the microwave.
6. Let them cool down a bit and then you can taste them. They are chocolaty to the max!
