SCRAMBLED TOFU WITH YOSOY SOYA

Looking for a different vegan breakfast recipe? Scrambled tofu is an ideal dish to start the day, full of protein, very filling and delicious! A nutritious meal that won’t take long to prepare and that you can make on the spot if you have tofu in the fridge. 

This scrambled tofu recipe is very simple and uses just a few ingredients: tofu, onion and a touch of Yosoy’s sugar-free soya drink to give it a fluffy texture that you’ll love. Sugar-free, gluten-free and totally vegan, this recipe uses spices and nutritional yeast to give the scrambled tofu that characteristic yellow colour of eggs.

INGREDIENTS:

1 large onion
2 tablespoons extra virgin olive oil
400g firm tofu
100ml YOSOY SOYA
2 tbsp nutritional yeast
1/2 teaspoon turmeric powder
1/2 tsp Kala Namak black salt
1/2 tsp garlic powder
1 teaspoon oregano
Pinch of ground black pepper

PREPARATION (STEP BY STEP)

Follow the steps in this easy scrambled tofu recipe for a delicious, fluffy, egg-like texture. Serve it with toasted bread and add any toppings you like: cherry tomatoes, avocado, seeds, spinach… you’ll never get bored with so many options!

1. Pour the oil into a frying pan and, when it’s hot, add the finely chopped onion, together with the salt, and fry it, stirring occasionally until it is translucent.

2. Press the tofu with a clean cloth to remove excess liquid.

3. Crumble it with your hands and add it to the pan. Continue to cook for about 6-7 minutes, stirring occasionally.

4. Add the YOSOY Soya drink, nutritional yeast, turmeric, garlic, oregano and a pinch of pepper. Stir well and continue cooking for a further 4 to 5 minutes.

5. Add salt and serve.
