ASPARAGUS AU GRATIN WITH MUSHROOMS

INGREDIENTS (SERVES 2):

1 bunch of green asparagus (250g)
6 mushrooms cut into slices
¼ onion cut into julienne strips
3 tbsp. oat flour
200 ml YOSOY 0% oat drink
1 tsp. mustard
¼ tsp. nutmeg
Salt and ground pepper to taste
100 g vegan grated cheese (optional)

PREPARATION (STEP BY STEP)

Making these grilled asparagus au gratin doesn’t have much of a secret, you can prepare the mushroom bechamel sauce while the oven is blanching. Both the amount of bechamel and the amount of cheese for the gratin are to taste. Follow the instructions carefully and prepare delicious gratin grilled asparagus!

1. Place a frying pan on the heat without oil with the mushrooms and a pinch of salt. Let them release their water until they start to brown.

2. Add 3 tablespoons of extra virgin olive oil, the onion and fry for 5 minutes.

3. Add the flour and cook, stirring constantly, for 3-4 minutes. Lower the heat and pour in the previously heated oat drink.

4. Stir while it thickens and in 7-8 minutes it will be ready. Add the mustard, nutmeg and salt and pepper to taste.

5. Wash the asparagus and cut off some of the stalk. Put them on a tray, cover them with the mushroom bechamel sauce and add grated cheese on top if you like.

6. Bake for 10 minutes at 200°C and then grill for 3-4 minutes in the upper part of the oven.
