CURRY DE PLÁTANO
INGREDIENTS FOR 3-4 PERSONS
1/2 broccoli
4 green runner beans
1/2 onion
1 carrot
2-3 shiitake mushrooms
500 ml YOSOY Rice & Coconut
70 g cashew nuts
4 tbsp. tamari sauce
1 tbsp. curry paste
200 g tofu
200 g chickpeas
PREPARATION (STEP BY STEP)
1. Cut the vegetables
2. Pour in the YOSOY along with the cashew nuts, tamari sauce, curry paste and half a banana. And get mixing!
3. In a frying pan with oil, sauté the tofu and vegetables until golden brown.
4. Add the sauce and the boiled chickpeas. Let it simmer and serve with a squeeze of lime, coriander and your favourite side dish. It goes great with rice and/or quinoa.
