CAULIFLOWER WITH YOSOY RICE + COCONUT

INGREDIENTS (SERVES 4):

1 cauliflower
½ clove garlic
1 teaspoon mustard
½ teaspoon salt
Pepper
2 teaspoons nutritional yeast
60 ml of Yosoy rice coconut drink
1 tbsp olive oil

PREPARATION (STEP BY STEP)

Cauliflower can be cooked in many ways, but for this recipe we will prepare it boiled – don’t forget to wash it well before putting it in the pot! You can serve this cauliflower recipe for dinner or as a side for meat, fish or tofu.

1. Clean and cut the cauliflower into florets. Put it in a pot, cover with water and cook for about 6 minutes.

2. Drain and place in a food processor with 1 clove of garlic, 1 tsp. mustard, ½ tsp. salt, pepper, 2 tsp. nutritional yeast, 60 ml. oat drink and 1 tbsp. olive oil.

3. Blend until smooth and creamy.

4. Serve with a drizzle of olive oil, chopped chives or fresh dill and pepper on top.
