COLD COURGETTE AND AVOCADO CREAM WITH YOSOY OAT 0%

Serve it to accompany your meals or for a light dinner, ideal for those days when we don’t feel like cooking. If you have a courgette in the fridge, you must try it!

INGREDIENTS (FOR 2 PEOPLE):
250ml YOSOY Oat 0% Sugar drink
250g courgette
100g avocado
15g spring onion (with green part)
10g green pepper
30g sweet miso (1 heaped tablespoon)
1/2 clove garlic
1 tablespoon lemon juice
2 tablespoons apple cider vinegar
1 tablespoon extra-virgin olive oil
Salt to taste
PREPARATION (STEP BY STEP)
Here’s how to make cold courgette soup quickly and almost without dirtying your kitchen tools. Although it feels simple, it is a very complete soup thanks to the avocado, olive oil and sweet miso. We recommend preparing it in advance so it can chill in the fridge, add your favourite toppings, and enjoy!
1. Whisk all the ingredients until you get a cream with a homogeneous texture.
2. Leave to cool in the fridge.
3. Serve chilled with crunchy raw vegetables, a few drops of extra virgin olive oil and sesame seeds, chopped nuts or croutons to taste.
