CARROT CAKE DONUTS WITH YOSOY 0% ALMONDS

INGREDIENTS:

200 ml of YOSOY 0% Almonds
2 tbsp. olive oil
1 tsp. apple cider vinegar
1 tsp. vanilla
6 tbsp. of a sweetener
200 g wholemeal spelt flour
3 tsp. baking powder
1 tbsp. cinnamon
1 tsp. nutmeg
1 tsp. ginger
2 carrots (100 g)

To decorate:

Melted dark chocolate
Chopped walnuts

PREPARATION (STEP BY STEP)

*Preheat the oven or the air fryer to 180°C.

1. In a bowl, whisk together the Yosoy almond drink, oil, vinegar, vanilla and erythritol.

2. Gradually stir in the flour, preferably with a sieve or sifter. Add the baking powder, cinnamon, nutmeg, and ginger.

3. Add the peeled and grated carrots.

4. Fill the doughnut pan and bake them in the oven or air fryer at 180°C for 12-15 min. You can also microwave them for 3 minutes at medium power.

5. Wait 10 minutes before removing the doughnuts from the pan. Let them cool completely before dipping them in chocolate.

6. Dip each doughnut halfway into the melted chocolate and top with a few chopped walnuts.

7. Let the chocolate harden for 30 minutes, or put the donuts in the fridge for 10 minutes to to speed up the process.
